Colombian Beef Flanks

True to Colombian taste and flavors, Frank Torres, showcases his culture through food that he serves. Such is his passion that being a Colombian living in Australia, not only does he bring together his community but also portrays a different view about his country to make people from other cultures experience a new Colombia through the food that he offers.

A whole list of tasty dishes are on offer at his restaurant in Melbourne, our absolutely lip-smacking favorite was the Colombian Beef Flanks.

Colombian Beef Flanks by Frank Torres is special because it’s still marinated the same way his mother learned it from her parents: with beer, garlic, capsicum, coriander, cumin, spring onions, and no doubt, a seasoning of family secrets. 

 We feel extremely lucky that Frank Torres has been kind enough to share his secret recipe with us and we can’t wait to try cooking Colombian Beef Flanks.

Ingredients:

1 Kilo of Beef Flanks

Ingredients for marinade:

1 large red capsicum diced

1/2 bunch of coriander

1/2 bunch spring onion chopped

1.5 teaspoons of salt

2.5 teaspoons of cumin

3 crushed garlic cloves

1 bottle of larger beer.

1.5-2 cups of water

place all ingredients in a blender until pureed to make the marinade

Method:

dice the flanks into chunks

place the beef into a deep oven tray, pour the marinade all over.

refrigerate overnight or at least 4 hrs.

cook fully covered with baking paper and foil for approximately

2.5/ hours at 180 degrees

serve with salad, boiled cassava, guacamole and rice.
